I love pink potatoes..but now I eat dem only when I get them home grown.
there is a farmer in Niagara with a shop outside his door who home grows small white potatoes and pink ones too. get him in late august through october. absolutely fresh and delicious. mm mm mm.
this meal reminds me of those potatoes
but I will make dat chicken with goat cheese. and I will season the bird up seriously, then brown is skin nicely by fi'ah.
I will roast or boil my potatoes mash and mix with cheese.
I will make a separate chicken seasoned sauce slightly salty, with neck and other parts...in which I will simmer the whole chicken at the end
I will bake the whole chicken in a covered pan. when almost cooked take it out and simmer in open man on stove in the chicken sauce. I can add the goat cheese to the sauce, and in and among the hot potatoes
I am not a fan of parmesan. old tart cheddar....YES!
