ok this is this stuff that you have to purchase
1 two packets of Knorr Swiss demiglace , one half pound of mushrooms , one smoked turkey thigh , bay leaf and some dry thyme
Direction
Skin , gut and chop Iguana into chunks , season all over with salt and black pepper and in hot skillet or flat bottom pan add some oil and lay the pieces of meat to brown turning it over so that it is done on all sides . Set aside
Follow the in struction on the packets of demi glace which is 3 cups of water to the two packets of demiglace and simmer for three minutes . Set aside
In a pot add some oil 1 chopped onions thyme and 2 bay leaves and let the the onions brown for a minute and to this add one half of red wine and all the meat at medium heat for about 20 minutes, then add the demiglace mixture.
Let this cook for about 2 hours covered ol low medium heat , adding salt and pepper to taste
While this is cooking cut musrooms into quarters and wash , cut up smoked turkey into little chunks .
In a frying pan heat some oil and add mushrooms and smoke meat , cook until the mushrooms are soft and set aside
When the reptile is finished cookinf with the meat falling off the bone, add the turkey mixture garnish and served over hot buttered egg noodles
There you have it IGUANA COQ AU VIN enjoy
