For me it has to be Chaminda Vaas

Not only did he somehow manage to take 355 Test wickets despite being a seamer on those ridiculous Sri Lankan home wickets, he also managed it at a career average under 30 and was damned handy with the bat to boot. Terrific and underrated player.
